This coffee is a real treat. Starting from the actual green coffee, it is beautiful and is so perfectly picked it has practically no defect. After roasting it only tells you the same thing, we barely have to take any defects out. Now the taste and aroma are just phenomenal with a medium body and an upfront citric quality that reminds us of tangerine following some nice florals and stone fruit with lingering sweetness well after you drink it.
Wilson is one of a few producers with whom Osito works within Palestina, one of Huila’s southernmost municipalities. Pink Bourbon is very popular in the south and the producers with whom we work in Palestina all produce excellent quality. This is our second harvest working with Sr. Alba and we were introduced to him by his brother, Jose, whose coffee we also buy.
For Osito, Palestina has slowly and quietly become a major focus for their sourcing in Huila. They only work with a handful of small to medium-size producers but the quality, on average, rivals any other municipality in Huila. Here in Palestina, Pink Bourbon is practically ubiquitous but apart from that, some of the Tabis and Caturras are almost as mouth-watering.
Palestina is a very mountainous region in the southernmost part of Huila. It is 346 km2 and has an average altitude of 1552 masl. Its average temperature is 66° F. Its population is 12,075 inhabitants.
